Achiras are a delicious traditional Huilense snack, the ideal accompaniment to coffee. It is made with achira or sagú starch, fresh curd, butter and egg yolks are added and then baked, resulting in an exquisite snack.
This snack is part of the Colombian gastronomic tradition. The plant with which the flour is produced thrives in the warm lands of Huila, in the municipalities of Altamira and Timaná, where the biscuit women who make these delicious achiras are found and which are the livelihood of thousands of families in the south of the country.
